Tetsuya Wakuda is widely recognised as one of the most creative and successful chefs in Australia. Tetsuya lived in a small Japanese town called Hamamatsu for twenty-two years. With only limited English, he traveled to Australia where he met Tony Bilson, who, in 1983, gave him a job at Kinsela’s making traditional Japanese food such as sushi.
