Nyotaimori, often referred to as "body sushi", is the practice of eating sashimi or sushi from the body of a woman, typically naked. As a result of being served on a human body, the temperature of the sushi or sashimi comes closer to body temperature, which some may see as a disadvantage or a benefit.

Simon Woodroffe OBE is a motivational speaker and entrepreneur. He started the sushi chain "Yo! Sushi" in 1997, and has appeared as a 'Dragon' on the first UK series of Dragons' Den. Simon left Marlborough College towards the end of the 1960s, at the age of 16, with 2 O-levels. He went on the road with the likes of Rod Stewart and The Moody Blues before becoming a stage designer. After a spell in television, he conceived and launched "Yo! Sushi" in 1997.
- Masaharu Morimoto
Masaharu Morimoto is a well-known Japanese chef, best-known as the third (and last) Iron Chef Japanese on the TV cooking show "Iron Chef", and an Iron Chef on its spinoff, "Iron Chef America". Morimoto's costume on "Iron Chef" is silver with red trim and a picture on the back of Japanese and American flags tied together in a sheaf, while on "Iron Chef America" he dons the standard blue Iron Chef outfit with white trim.

Tetsuya Wakuda is widely recognised as one of the most creative and successful chefs in Australia. Tetsuya lived in a small Japanese town called Hamamatsu for twenty-two years. With only limited English, he traveled to Australia where he met Tony Bilson, who, in 1983, gave him a job at Kinsela’s making traditional Japanese food such as sushi. It was at there that he was first given the opportunity to experiment, creating new fusions of East meets West.

Homaro Cantu, inventor, entrepreneur, chef, and leader in the field of molecular gastronomy operates the Cantu Designs Firm in Chicago, Illinois, USA. His restaurant, Moto Restaurant, is famous for creating sushi using a Canon i560 inkjet printer. Rather than using conventional inkjet cartridges, he creates cartridges that are filled with organic, edible "inks." He also has other patents pending around various food delivery systems.
- Hanaya Yohei
Hanaya Yohei is generally credited as the inventor of today's Tokyo-style ("Edo-mae"; 江戸前) "nigiri" sushi (hand-formed sushi) at the end of Japan's Edo period. Sushi at his time was made from freshly captured fish from the nearby Tokyo Bay. This ruled out many of today's popular materials such as salmon roe ("ikura"; イクラ). Even though Tokyo is a coastal city, food safety was still a concern before the invention of refrigeration.
